Banaras eats early, and much of the old city eats vegetarian. By seven, iron pans are hot in the lanes, kachoris are puffing up in the oil and the first jalebis are coming out crisp. This morning is built around that ritual, with a host who knows the counters and the order to visit them in.

The tastings follow the season. Expect kachori with a spiced potato sabzi, jalebi, lassi thick in a kulhad, the unglazed clay cup, and chai. From roughly November to February there is malaiyo, milk whipped into a saffron-scented froth at dawn and gone by mid-morning. Between stops your host tells the stories of the dishes and the neighbourhoods, so breakfast becomes a way into the city.

Portions are small, every tasting is optional, and dietary needs are planned in advance. Because this morning covers similar ground at the same hour as Before the City Stirs, the walk-led alternative, we suggest choosing one of the two, or placing them on different days.

WHAT TO EXPECT

Step by step.

  1. Meet your host at the edge of the old city in the early morning.
  2. Four or five breakfast tastings at chosen stalls.
  3. Seasonal specialities, including malaiyo in the winter months.
  4. Stories of the dishes, the cooks and the lanes.
  5. Finish with chai, close to the river.
GOOD TO KNOW

Before you go.

  • Walking: about two to two and a half hours on foot through busy lanes. Closed shoes and modest clothing are wise.
  • Timing: starts early, around seven, as many dishes sell out by mid-morning. The exact time is confirmed in your quotation.
  • Diet: tell us about allergies and diets in advance. Many dishes are fried and contain dairy, wheat, ghee or sugar.
  • Access: the lanes are crowded and not suitable for a wheelchair. Come hungry, but not starving.

Added items are requests. If something is already part of your journey and tier it shows as included and is never charged twice.
